Sesame Watercress

Spicy Grilled Tofu & Vegetables

Watercress, an ancient green and one of my favorites of all time… perhaps I was intuitively drawn to it’s high water and vitamin C or A content or maybe my body was calling for its antioxidants, iron, iodine, folic acid, and fiber…In any case, beyond its nutritional function, watercress can slow down aging, work as a natural antibiotic, and improve mental function and memory. I had my first encounter with this amazing yin superfood over 10 years ago and eat it regularly as a way to stay cool and calm, as it removes excess yang from the body, especially during hot summer days…

Add sprinkles of himalayan sea salt crystals and your body’s cells will rejoice… In its unprocessed state, pink sea salt is loaded with minerals and trace elements, it’s what table salt (sodium chloride) used to be and should be replaced with.

Drizzle with pure sesame seed oil and garnish with sesame seeds… another good source of protein, omega 6, calcium, phosphorus, vitamins A & E, fiber, folic acid, B complex, and great for lubricating the intestines, harmonizing the blood, combating constipation and treating anemia.

Spicy Grilled Tofu & Grilled Seasonal Vegetables

Tofu marinated in Earth’s Elements own, gourmet spice rub (found at local Farmer’s Markets in 19144 area), simply described as a vegan shake and bake, except in this case, we fired it up by grilling the tofu and zucchini, squash and red peppers, and assembled by wrapping the vegetables, in blanket style around the tofu and garnishing it with fresh basil.


Both hydrating and alkaline in nature, watermelon and lime are a refreshing match made for this light summer dish. The powers of this African native are attributed to its high water content, low calories, vitamins C & A and lyposene. Watermelon is also an anti-oxidant that helps neutralize free radicals and helps quench inflammatory conditions associated with asthma, diabetes and arthritis.  Garnish with blueberries and lime and transform fruit into a simple, sweet summer dessert.
